Hearty Oat and seed loaf

You can slice this and slather it with peanut butter or tomato and rocket and hummus or any variety or goodness.

OR

For crispy bikkies, slice thinly and spread the slices on a tray for a second baking.

 

Ingredients

3 cups rolled oats

½ cup each of: chia seeds, pepitas, sunflower seeds, hemp, flax (linseed) and sesame seeds

1 teaspoon salt

1 tablespoon maple syrup (or brown sugar/ coconut sugar)

1 teaspoon baking powder

2 cups warm water

 

Method

Preheat the oven to 180 degrees.

Combine all dry ingredients in a bowl, stir in the maple syrup and warm water.

Let the mix stand for five minutes.  While it’s standing, line a loaf tin with baking paper.

Transfer the mix to the lined tine (flatten with spatula)

Bake for 30 minutes then remove from oven, flip over and place the loaf back in the tin and bake for another 30 – 40 minutes.

Cook before cutting.
