Date and Oat Slice

This super tasty slice is adapted from an old favourite....but there's no butter or processed flours in it! Whole foods with taste....plate some up for afternoon tea today.

 

Date filling

3 cups (400 grams) dried pitted dates

1 cup (240 ml) water

1 teaspoon pure vanilla extract

 

Oatmeal crust

2 cups (200 grams) old fashioned rolled oats

¾ cup (130 grams whole meal flour or other whole grain flour

1/4 cup (160 grams) packed light brown sugar

½ cup peanut butter

¼ cup coconut sugar

½ cup shaved or desiccated coconut

½ teaspoon baking powder

¼ teaspoon salt

1/8 teaspoon ground cinnamon

¼ cup oil

1 large grated apple

 

METHOD

Preheat oven to 180 degrees, grease and line a 12 inch pan with baking paper

Cook dates in water on medium heat until the water is absorbed (8 – 10 mins). Remove from heat and add vanilla. Cool and puree.

Pulse all ingredients (except oil). Then add oil until the mixture is crumbly. Press 1/2 of the mixture into the base of the pan, cover with date mixture and then spread the rest of the crust on the top.

Bake 30 - 40 minutes until golden brown.
