All Round Brilliant Seed biscuits

Super easy bread replacement

Top with everything you love: peanut butter and banana; hummus, tomato and basil; carrot puree and onion....use soft as a rolled seed bread, or cook til crisp and use as a cracker.

Ingredients

½ cup each of oatmeal, chia seeds, sunflower seeds, flax (linseeds), hemp seeds, pepitas.

3 1/2 cups water

Pinch salt.


Method

In a bowl combine the water, chia and oatmeal. Allow to rest for at least 1 hour so the oatmeal and chia become smooshy (release their soluble fibre)

Spread on oven sheets (on baking paper). Bake for about 20-30 minutes at 180 degrees.

Lentil crisps

1 cup cooked red lentils (from your pre-cooked pot) (See recipe here)

½ cup each chia seeds, sunflower seeds and flax.

1 cup water.


Soak the chia seeds for at least 1 hour in water

When the chia seeds are really gloopy and can’t take up any more water, add the other ingredients. Mix. The mixture should be wet enough that when you spoon it onto a tray, it spreads out.

Spoon the mix onto trays (or make one big tray sized biscuit). Pat with a fork so It’s really flat.

Cook in moderate over for 20 minutes, or until crisp.
